I was wondering what to do with the shitake mushrooms that I soaked in water yesterday evening..(I was going to use them in the risotto, which didn't happen because I couldn't get white wine....), and then remembered I had bought some kimchi, so maybe I could make kimchi stew! I found some pork rib in the freezer too, so that also went into the stew ;)
Ingredients: Pork rib, kimchi, shitake mushrooms, garlic, cilantro
It was quite good, although next time I might try using the instant pot to cook it quicker, and make the pork softer.
